Poor Man’s Lasagna

Poor man’s lasagna was a regular meal in my house growing up. It was my dad’s very own recipe (just ask him). We ate it about as often as we had Arni’s pizza.

I fixed it tonight for my daughter and it was a big hit.  If you need something to fill stomachs on little time and few ingredients, here’s the recipe:

Ingredients

1 bag egg noodles

1 package of mozzarella

1 package of sausage (you don’t have to include sausage for a vegetarian poor man’s lasagna; also, you can do what I did tonight and use pre-pattied sausages that were meant for breakfast but got used for spaghetti meat sauce)

1 jar of spaghetti sauce

Boil your egg noodles and drain. Place in a casserole dish. Cook sausage into small pieces. Pour spaghetti sauce over cooked sausage and mix together to make meat sauce. Pour meat sauce over cooked noodles. Put mozzarella cheese over spaghetti meat sauce and noodles and bake for awhile at about 350 degrees. (Awhile means until the cheese has melted completely and the meat and noodles remain warm). Serve.

So I’m back to health. I’ve actually eaten something today and drank coffee. I cooked food and stood up for more than 45 seconds at a time. I even answered emails and wrote a column that got turned in 24 hours past my deadline. Tomorrow I may even leave my house. Small steps, Ellie.

It feels good to be back in the land of the living-without-the-flu. To top it off, tomorrow I will return to my 4:30 a.m. waking routine and head back to fitness boot camp (which really should be called kick-you-in-the-butt-with-my-boot-camp…damn, that was funny. I wish I would have thought of that when I wrote the column about boot camp).
